Rum & Raisin Dubbel
A Belgian Dubbel with the addition of raisins in the boil and rum soaked raisins in the fermenter. It’s quite a bit darker than the style guides allow!

Hokey Smoke – Smoked Porter
A classic smoked porter. I used the remaining smoked malt I had on hand. Hence the unusual amount. The smoke on this one is a bit light and faded part way through the keg. The smoked malt was a bit old so that might contribute to that. It does make a good porter, though.

SMaSH – Viking Munich 1/Polaris
Another single malt and single hop brew. This one features Viking Light Munich Malt and Polaris hops. The malt is quite sweet and needs a bit more bitterness to balance. An interesting combination. Might try it again with a lighter malt and more dry hopping

Go West 2020
Taking another stab at an IPA. This is an adaptation a previous recipe. It uses a good portion of rye malt and some hops I haven’t used recently. Like most of my IPAs. Kind of meh!

Pumpkin Ale 2020
I haven’t made a pumpkin ale in a few years. Since I have a lot of puree in the freezer, I thought it was about time for another one. For this one I made my own fresh pumpkin spice blend. This one is really good. Should be added to the pipeline every fall.
Pumpkin Spice Blend:
6 tbsp cinnamon,
2 tbsp ground ginger,
1 tbsp ground cloves,
1 tbsp ground allspice,
1/2 tbsp ground mace.

Mystery Box 2 – American Porter
Another of the beers made with the box of ingredients for the Members of Barleyment & Beau’s Oktoberfest home brew competition. Basically, using up the rest of the ingredients.

Mystery Box 1 – American Wheat with Elderflower
One of the beers made with the box of ingredients for the Members of Barleyment & Beau’s Oktoberfest home brew competition. I used a lot of elderflower and it comes through. Some might think too much. Although, you won’t miss the elderflower.

Orange Hurricane – 2020
This year’s version of an orange chocolate stout.

Ho Ho Hold the Payments – 2020
An American Porter spiced with black pepper, cloves and star anise.

Harvest Ale 2020
Brewed while harvesting the this year’s crop of Cascade hops.

Bay Brew 2020
An annual gruit brewed with juniper, wormwood and bog myrtle growing on the south shore of Manitoulin Island.

Manitoulin Wild Ale
This one was left out over night to be inoculated by yeast and bacteria from the local area. Could be interesting!

Pink IPA
An IPA featuring Falconer’s Flight hop blend and 25g of hibiscus to give it the pink colour. My first attempt at this. Who knows.

SMaSH – Heidelberg
A SMaSH featuring Heidelberg pilsner malt from Best Malz and some home grown Cascade hops. Heidelberg is made using special, two-row barley variety that tends to create less color during the malting process

SMaSH – Wild Thing
A SMaSH featuring pale malt from Barn Owl, home grown cascade hops from 2018 and the Wild Thing Yeast from Escarpment Labs

Clifford the Big Red Ale
A harvest ale using home grown cascade hops and mixing a Escaprment Labs – Laerdahl Kveik and White Labs – WLP603 Torulaspora delbrueckii

Spontaneous Jayne
This is an experiment in wild fermentation. The after boiling the wort is split into two pots and left to cool in the back yard and become inoculated with wild yeast and bacteria.

At My Wit’s End – Raspberry/Rhubarb Edition
A witbier with raspberries and rhubarb added to secondary. The recipe doesn’t really capture the cereal mash I did. The software I use doesn’t support doing a cereal mash.

Spooky Saison
A sessionable saison featuring the Spooky Saison yeast from Escarpment Labs

Red Rover Porter
A porter on the lighter side of the color range for a porter. The goal was to make something with a deep red color.

Blonde Ale
A light tasting beer with traditional German hops rather than modern American hops. More beer falvoured beer

The Bitter End – Best Bitter
A recipe I’ve brewed a few time but not recently. It uses some uncommon malts but is quite tasty. I haven’t used WLP006 before. Should be interesting.

Drifter – New England IPA
I’ve made a variation of this over the years. This edition has Centennial for bittering, El Dorado, Southern Cross and Rakau for flavour and aroma.

IPA Summit/Sorachie Ace/Simcoe/Waimea
My first IPA in quite a while. This one features the hops Summit, Sorachi Ace, Simcoe and because I didn’t have enought Simcoe – Waimea
